On the Grill

Post by Kchurchill5 » Sat Apr 21, 2012 6:48 am

Steelhead, Potato and Lemon Broccoli

Everything on the grill - My kitchen is still pretty unorganized.

Salmon: The best part, that whole fish was only $4.99. What a deal and it was fresh too. I got 3 pieces out of this.
- I used Williams Sonoma Lemon Herb Seasoning which is wonderful. I believe I got that in a basket for a Herb and Spice Swap at another site. And I'm sure MaMere was my partner. I love that spice.

Broccoli: Wrapped up in foil with a little chicken broth, lemon pepper, and 1 smashed garlic clove, just for a little garlic taste.

Spud: Topped with a little garlic butter (just a little) and then greek yogurt vs sour cream. And BTW, that potato was not nearly as big as it looks :)

What a great looking meal. That salmon was sure a bargain, we never see prices like that. I like how you did your broccoli. Lovely photos

Great photos on a wonderful meal - we love salmon, prices here are super high! Seeing those pics I am so thinking salmon for our first grill - if that white stuff ever stops falling! :D

Thx guys, Gerry ... I'll do a NO snow dance. I wouldn't want anymore either.
Bergy, thx. The broccoli gets so much flavor, it really doesn't even need butter. Sometimes, I will give it a small dab, like 1/4 teaspoon if that. But it really does get flavor from the broth and garlic - and no clean up.

Yes, the steelhead was a bargain and I love it. It is a bit sweeter and richer than the salmon; and often a bit more red, but I love it even more than the salmon. When it goes on sale, I make sure to pick some up.

And using a flavored butter such as garlic gives a lot more flavor with a lot less butter; and then the yogurt vs sour cream saves on some calories. Still not LOW carb, but since everything else was pretty low in fat; I figured I would indulge. Besides, I had cottage cheese for brekkie; and mango and a couple of slices of ham rolled with cheese for lunch.

Thx QB, my favorite meal too ... seafood and the grill. But the best part was NO dishes, just a fork and a plate!!
