Elvis Presley's Spanish Omelet

Very nice basic Omelet. I let the onions & peppers cook for a couple of minutes before adding the egg/cheese mixture to the pan. I cut the recipe back to 2 eggs. 5 minutes covered was perfect. I enjoyed my Sunday Brunch and will repeat this recipe. Perhaps I'll sing along with "Heartbreak Hotel"
