Mexican Potato & Egg Omelet
I cut the recipe back to one serving (2 eggs), used fresh Jalapeño instead of canned chilies. I didn't use any bacon just to cut back a bit on the calories. Next time I will include it. Served with medium heat salsa, A really tasty Sunday Brunch that will be repeated.

As you know Bergy, I too am very fond of omelets, seeing these taste tempting photos had me check out the recipe. It is so on my to make list! Unless I have company I too would have to cut back the recipe. Have added hash browns to my shop list. Now off to print the recipe.
