Confetti Scramble

Another lovely recipe for Sunday Brunch. I cut the recipe back for 1 serving (2Eggs).
Very Tasty easy recipe. I used red Pepper in place of opening a jar of Pimientos. This recipe would be lovely as an omelet too.
