A "Kind Of" Mexican Dinner

It may not be a true Mexican dinner but it sure was tasty. The Calabacitas is wonderful - I used Cottage Cheese on top. It needed about 5 more minutes in the oven for the Cottage Cheese to totally melt & turn Golden. Cottage Cheese melts just like any other cheese and flavours like sour cream.
The salad is very basic but was perfect with this meal. The Euro frank was heated in the oven covered with green salsa. Mmmm Meal
