Lunch with Breezermom
I am moving pretty soon, so I am in the process of emptying my freezer and pantry.
I've forbidden myself to buy anything!
My trips to the grocery store are pretty boring...milk..coffee..toilette paper.
So, I saw Breezermom's recipe Beef Tenderloin, Swiss Chard, & Carmelized Fennel Tacos And I thought...I almots have all the ingredients.
So I made it!
But the truth is, I had the fennel and the Swiss chard. And the rest were...pretty close.
This are the substitutions I made:
Red onion, instead of yellow onion.
One whole wheat and one curry tortilla instead of corn tortillas.
Homemade yogurt cheese instead of Mexican crema
and..the big one: fried mini meatballs instead of the beef tenderloin.
The results were delicious.
I'm not posting the photos to the recipe because I think I made to many changes.
The meatballs by the way I made them with some leftover stuffing I had, also from Breezermom's Meat-Stuffed Cabbage Cakes .
I made little meatballs and I froze them. Then I just fry them, directly from the freezer. They are really good!
I did saute the kale instead of using it raw, just by mistake. Really good with the lemon!
