Big Ole Tex-Mex Burrito Omelet

Super loaded tasty omelet. I cut the recipe back to 2 eggs and it was a large brunch that was enjoyed. I used black beans instead of Pinto. This looks messy but that made it all the more enjoyable. Will make it again.

Thanks Bea - It was very big but I ate the wole thing. Just had a couple of veggie bites at 3PM and your prawns for dinner
