Great Potato Salad

I made this to bring to a pot luck this past weekend and it was a hit!!! I had never tried this type of potato salad and I really enjoyed this non-mayo based version; it was very moist and flavorful. This will be made often. The only change I made was using roasted red peppers in lieu of red and green bell peppers. I'm very happy you shared this here ForeverMama!

That looks delish, mustard really boosts the flavor up in anything :D
