Potato Pancakes

I made some potato pancakes - I tried a couple of recipes.
Mashed Potato Pancakes and
Potato Pancakes - Kartoffelpletter. Both are somewhat similar and are both fantastic!

I like the video, it tempts me but would like to see the dipping sauce finished. (I know you said make whatever sauce you like but would still like one finished or have that last bit cut out)
Photo #3 is super and I like #1. The composition of #2 is right on but the lighting on the sauce is a bit bright. Just my opinion it doesn't seem to bother anyone else.
