Lunch and Dinner

Lunch was a vegie packed soup (have not posted recipe but working on it as I really didn't measure out ingredients but it did involve 12 cups of chopped vegies plus 3 large roma tomatoes chopped and a can of crushed tomatoes and for dinner we made our recipe of http://www.recipezazz.com/recipe/chicke ... -fry-15201

I used Wokka wholemeal noodles (purchase of the shelf in the Asian section) and doubled the recipe for the chicken and noodles but as I was serving the noodles in the bowl and serving the chicken over I only used 200 grams for both of us (since the recipe was printed Wokka have decreased their package size from 440 grams to 400 grams and there is 2 small packets in each packet.) And as the Dh hates capsicum I used half a red one and had most of that myself (mostly buried under the chicken) and cut back on the carrot and used a whole onion cut chunky so the Dh could remove from his dish. The sauce is quite sweet and the crunch of the cashews is really nice. Left overs went into the freezer for Dh when on night shift. If you were to use the quantity of noodles and vegetables to the 500 grams of chicken there would be plenty for 4 but would be very vegie packed.
