KC's Scallops with Beets & Carrots

The orange with the Jerk spice give the scallops a smooth peppy tasteI I used a Hula orange cutting the recipe back to 2 servings. Unfortunately I thought I had some black olives but didn't. The good thing about that is I'll just have to make the recipe again.

Beets & carrots are made for each other. I don't buy the ready peeled baby carrots after reading how they are treated. I have edited the recipe to include cut carrots.

I know that there are many articles that say the opposite of this report but it made sense to me. The clorine may up scaled in the article but just to save a bit of time I will peel mine thanks

I saw a documentary on those baby carrots a while back and I have never bought them since...
