Mouth watering Photo. The roast looks perfect. Wait til Shapes sees this - she will have 100 ideas of what to do with the left overs.

That pot roast looks awesome. Great colors; and, a crisp photo.
As for leftovers, I am too for pot pie; but, if he doesn't like it; how about Shephards pie. Hash, I agree is always good. It it also great with a gravy, add some mushrooms; and serve over baked potatoes. And, it makes a great ravioli filling; or even enchiladas.
