Chicken Shallots and Figs

Chicken Shallots and Figs
A new recipe. Sauteed chicken breasts with a homemade montreal type of seasoning.
Then, finished by baking with shallots (but, I had to use small onions), fresh figs, red and balsamic vinegar, orange blossom honey, and a little broth. Fresh rosemary and thyme sprigs, under the chicken and veggies. Finished with a pat of butter.
I should of put a fresh sprig of herbs on top to take the pic, I forgot.
Serve with a side of roasted beets.

Sue, I do love a 1 pan or skillet meal.
I do another with thighs, fennel, onion, red pepper, potatoes, and thick slices of sourdough. Has a spanish type of flavor. Then, served with a simple vinaigrette over the top when served.
Just line with parchment; and, no clean up. It's great when you don't want to spend too much time in the kitchen.
