Day 1 and Day 2

Day 1 and Day 2
Soon to be lighter Scalloped Potatoes with Sausages posted; Day 1 and 2; then, Day 1 and 2 of pecan crusted chicken recipe made into a salad.
The spuds unlike some recipes have no roux or cream sauce; or cheese. Spuds, onions, Banquet breakfast sausages, thyme broth, half and half; and, just a little butter - s/p. Very easy. No mixing, nothing. Just throw in a pan and bake. I did finish with a little sharp white cheddar on day 2 with the peas.
The chicken I posted a few days ago with a simple cranberry sauce w/;added apple. A little balsamic sauteed sprouts sprouts.
Day 2, with arugula, romaine, apple, cucumber, cranraisins, oranges, red onion, leftover chicken of course; goat cheese and honey dijon mustard homemade dressing.

4 nights worth. I really only cooked once. Just reheated on Day 2 - best part. But, thank you very much.
I do love my leftovers ... Day 2 sometimes can be better.

Monday I'm spatchcocking a 7lb. chicken,so watch out.

Like you shapes ... if I have 1/2 chicken breast, I make a small batch of chicken salad for crackers for my lunch. It's just me.
I just hate to waste things.
So, I always appreciate your use of all your leftovers. That is something I always do.
