Brunch with imPat's Cheese & Spinach Omelet

Spinach is so delicious with eggs and this recipe proves it! Very easy and very tasty. I used 3 cheese Tex Mex shredded. Served with a bit of BBQ sauce. It will be made again. Photo #4 is my favorite - what's your?

All, killer photos. I love #3 especially; but, all really nice. Sounds wonderful.
