Greek pan sauteed chicken, roasted lemon; greek couscous; and a warm mix of tomatoes, olive, onions, sun dried, peppers/onions, Feta
In a foil pouch on the grill ... leftover rice; a mix of zucchini, yellow squash, peppers/onions, mushrooms, 2 cheeses; and topped with a spicy chicken sausage. Easy and Delicious. Messy looking, but it was great.
This was one of my freezer burritos; this was beef and bean. Topped with salsa, cheese, sour cream, avocado, cilantro, greens, and a cilantro/lime vinaigrette. http://www.recipezazz.com/recipe/easy-m ... ritos-2051

This was a simple mix of fresh herbs, red pepper flakes, wine, spicy seasoning on the shrimp; and, plenty of fresh vegetables. Very light and easy.

This was just a mix of whole wheat pasta, mixed mushrooms, asparagus, broth, sherry, onions, scallions, pecorino romano; and, just a bit of cream for some richness.

Thx guys. I've been really cooking easy, out by the pool, simple foods. Mostly heated up on the grill, freezer stash; or reinventing stuff on hand. I really got behind with too many freezer items; so, that is what I have been doing.
But, I have been cooking, really. Shapes, I knew you would appreciate; using lots of leftovers and trying to use them a bit differently.

Deanna, no NOT in one day. Over the last couple of weeks. It's just me eating at home. I've just been lazy at making any real recipes or ... trying new ones.
