This is something I make often ...
No recipe. I just take my pot roast and chop it up. I usually have onions, celery, potatoes, beef or course; and, often mushrooms and peppers - and chop up the leftovers.
Spread on half the quesadilla, some swiss or provolone; fold over and grill.
Great quesadillas.
One of my favorite soups. Ready for the freezer.
Sausage or this time chorizo. Spinach, tomatoes, celery, onions, peppers, cannellini beans, and dittalini pasta. Makes a great soup for the freezer. 5 containers on hand.

Thx, the quesadillas are my favorite; and, a really nice way to use up that leftover pot roast.

Thx Shadows ... yeah, the second one was about 11pm in the dark in my kitchen, packing them up for the freezer. But, it is a favorite soup. It does change a bit from time to time; but, the basic ingredients; always a good soup for the freezer.
