ISO Kid Friendly low cal/low fat recipes

Post by MommaG » Thu Oct 16, 2014 1:00 pm

The doctor has deteremined my 11 year old is over weight. I thought he was just solid, no big gut. So I now I have to come of with really good balanced meals to help him lose the weight. Problem -- he is picky (like his daddy). He needs to start eating vegetables. I can't disguise them with sauce, too many calories. Any ideas, tips, tricks?

Just a quick idea, hows about a low-fat smoothie blended with some veggies? kids love smoothies! I know it's not a meal replacement but it may hold them until dinner and you will get veggies in that way and the flavor will be masked, I get my broccoli in that way and I add it in raw!

Dont have a recipe posted for this, but you can take things like green beans or zucchini sticks, even pieces of eggplant, broccoli or cauliflower florets and dip them into beaten egg, then bread crumbs or panko and bake at 400 until crisp. Panko doesnt brown as nice as other bread crumbs but its okay.
If you season the breadcrumbs nicely with garlic and herbs, wont need a dip. But there is always a little fat free ranch dressing or marinara sauce. Just dont overdo the dip.

Portobello mushroom hamburgers are another good idea. And homemade pizza topped with roasted vegetables- toss the veggies with a little olive oil and roast them until tender. Roasted garlic added is good too.

Will he eat soup? Vegetable soups are great.
