"Chefy" Tip of the Day - 11/21

Today is all about "Thanksgiving!!"

Now, I am sure many of us already no these. But, always a good reminder.

1. Take turkey out NOW, put in fridge to defrost if frozen.
2. Always always have a couple of containers or more of turkey or chicken broth on hand. You can rehydrate potatoes, dry stuffing. Make gravy, fix dry turkey. A MUST!!
3. A nice touch, make a compound butter to add to your turkey now. Then, you don't have to worry about it Tday.
4. Make cranberry sauce NOW and freeze; or Monday and Tuesday and put in the fridge.
5. Pies, make ahead, you can easily freeze.
6. FIND YOUR DISHES, and make a plan. That way, you know what you need.
7. If making a sauce for the ham, make that ahead too.
8. Potatoes can be made 2-3 days in advance, then, just reheat.
9. Always have a package of extra butter.
10. Check your baking powder, baking soda, flour; so, all are fresh.
11. Make sure you have sugar, salt and pepper. We all think we have them, make sure that you do.
12. Poultry season. NOT last years, get fresh.
13. Wine, get red, rose, and white; not everyone likes what you like.
14. Also, plenty of ICE, and I mean extra. Fill up a cooler!
15. If using the grill ... get an extra propane bottle. Yes, you can run out; but, you can also get a bad bottle too.
16. Make your casserole in advance ... many can be reheated in the micro; but, you can stack them on top of one another in the oven too. Just sheet pans to separate the dishes. Take out all the shelves except the bottom one; and stack up. You can get 5-6 dishes.
17. Take your butter out to warm up before dinner.
18. Decorate your table with dishes the night before; including all the serving platters and bowls.
19. Ham can easily be baked a day before; then, sliced and just reheat.
20. Spend 1 night; and prep all the veggies for stuffing, cut potatoes (just keep them in a bag in water; they will not brown). Prep anything you can.

Also, if you can't find a little jar of pumpkin pie spice mix in your pantry, just mix together 1 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ground ginger, and 1/8 teaspoon ground cloves.

Also, and this is a biggie, after dinner, delegate someone to entertain the little kids with a game or something, so that clean-up can be done without the little ones under foot.

Great tips. And delegate, get others involved; even if it is just setting a couple of dishes on the table; or filling water glasses. People really don't mind helping out a bit.
