WHAT'S FOR DINNER - OCTOBER 2015

I can't believe it's October already. Was I in a coma? Where did the summer go!
So tonight it's Stuffed Pepper Soup http://www.recipezazz.com/recipe/stuffe ... -soup-8223, with some crusty Italian bread. It's kind of cold and blustery here today, so this will taste real good.

I can't even plan for the next day let alone the whole month of October :shock: quick meals only on working days, cooking days are my days off :D

I don't make out meals for the whole month and if I did I know I would be changing it :o

I thought I posted yesterday. Sorry guys, I must of forgot to hit send.

Sorry, I didn't chime in yesterday.

Yesterday, I made a new burger recipe for one of the ladies I cook for. A triple green chile burger. A new recipe. Added some sweet potato fries and a melon salad.

Me, I made a pan of butternut squash, spinach, and ricotta stuffed shells w/green salad. But, ended up going for for a big lunch

So, tonight it is just me. So, I just have to bake the shells.
Two of the ladies I normally cook for on Friday are out.

I also am making a pot of potato soup for my freezer stash.

Tonight it was just Italian sausage sandwiches and brussel sprouts with chunked cooked butternut squash, with rosemary, thyme, salt, pepper, onions, garlic, chicken broth (to steam brussels), topped with chopped pecans, crumbled bacon and maple syrup. Lemon poppyseed muffins for dessert.

Sounds delicious lovin, sounds delicious. Love sprouts ...My market just got some beautiful baby ones in this am. Looking forward to them this week.
