IT'S BEEN A CRAZY COUPLE OF DAYS ...NOTHING MUCH, JUST BUSY!

My dinner tonight is stir fry with chicken using frozen stir fry vegetables and rice, it's a quick dinner for Tuesday :D

Last night I finally got around to making those burgers. :P

Tonight: Planning to bake some chicken that I have marinating in a lime/cilantro/garlic mixture. Probably with broccoli or asparagus, since I have both needing to get used up. Possibly also a side salad made with some of those salad greens that still haven't wilted. The new fridge keeps things fresh far longer so far. I was used to greens getting wilted after a few days, but so far everything is still crisp and fresh looking.

Also planning to make up some more marinades (some homemade, some from a bottle) for another batch of chcken breasts to stash in the freezer. Chicken was on sale today so I bought a bunch to freeze.

Heather, that chicken sounds delicious! I always marinate my chicken and pork chops before cooking. And you can use the marinade as a sauce, AS LONG AS you boil it for at least 10 minutes. This will also reduce it down to make a thickened sauce. So be sure to make enough marinade so it doesn't boil away.

Last night I just made breakfast for dinner. Always love breakfast.
Tonight I made smoked sausage split, browned and brushed with BBQ sauce, also couscous with savory herbs (oregano and thyme leaves), dried cranberries and chopped pecans, and cooked carrots with a butter/brown sugar/dijon/cumin/cayenne sauce.

For dinner tonight it's baked chicken and Mexican rice although the Mexican rice may change to to something different such as baked onion rice :D

Tonight it was real easy. Today when I went to the grocery store, I picked a rotisserie chicken, had it with corn and peas, leftover couscous and green beans.
