59 - you know I am a big leftover fan! chicken and gravy sounds good.

Camping/Horseback Trip delayed - 3 friends going are all sick
Honestly, I have chicken soup in the freezer; and, there is always a tuna melt, BLT, omlette, etc. - I won't starve

HF, National Pizza Day was yesterday, LOL!!!!
Leftovers, always good. Ellie sounds good.

I have decided to go with a mini frittata, have lots of veggies I can add. Even some hashbrowns I can throw in. That's my leftovers for the night.

Tonight I made individual sloppy joe pies made in Pillsbury Grande biscuits flattened out and put in jumbo muffin tins, add sloppy joe mixture and top with shredded cheddar and baked according to biscuit directions; and also mac 'n cheese. We're kinda weird in that we don't like mac 'n cheese with stringy cheese. We like Velveeta and goat cheese melted in a white sauce. We like it smooth and creamy rather than stringy.

Lovin, nothing wrong with that cheese; I like stringy - but, I would eat creamy too. Sometimes, I break out the good velveeta TOO. I add a little gorgonzola, just a tad; I bet the goat would be good.

Honestly, I could eat mac and cheese just about anyway it is made.
The SJ's sound good. That's a good midwest comfort meal ... or at least something I would enjoy!

My fritatta ... lol, turned in to scrambled eggs, because I forgot to oil/butter the pan, oops. It was still good. It had a bunch of veggies, hashbrowns, cheese, etc; toast and fruit on the side.
Nothing exciting; but, good enough.

Lol - well I was oblivious to that event. We often eat pizza on Friday nights (sometimes frozen, sometimes homemade).

I love fritattas! I make them a lot too, to use up all the leftover veggies and bits of cheese in the fridge.

HF, I keep a Publix Frozen cheese pizza in my freezer at all times. Sometimes I add fresh mozz and tomato basil; sometimes ... all the veggies in my fridge, lol. It's always a quick go to dish.
