It's The End Of Yet Another Week ... So, What Is Everyone Up To?

Today's Cooking ...
Me: Out to Happy Hour with friends to our fave Mexican place. That is dinner. I always have stuff at home ... like popcorn if hungry.

Prep for a party tomorrow for 18. A southern dinner. So, food prep, set up prep, etc today. But nothing too difficult.

I like to pickle some peppers from my garden today but, that might have to wait till Sun. Not sure if I have enough pickling spice.

Tonight I made some homemade mushroom soup and made some sandwiches with leftover crunchy baked chicken breasts on toasted ciabatta rolls with mayo and basil pesto.

I think chicken is on the menu the past couple of weeks; me too. It must be those cold winter months, baked chicken is always a favorite.

I had to run to the store for my dinner party; and, they had fresh trout on sale ... I couldn't pass it up. After the dinner party, I think I will grill my whole fish along with a 2x baked spud (I have a half in the freezer); and, a quick salad. Super easy. I can never pass up fresh fish.
