What WAS on Your Plate & WHAT'S for Dinner 12/1-12/2
THE COUNTDOWN TILL XMAS HAS BEGUN ... 25 DAYS AND COUNTING!
So, Are We All Ready For the Holidays?
Just me tonight. I picked up a salmon burger at the seafood market; maybe a mustard sauce with it over a bed of greens; and, a tomato cucumber salad. Or something like that. Maybe some fruit too.
My swiss chard is also SO HUGE; I've been using it all the time. However, I have a lot left.
Thinking of a rice/vegetable/herb stuffed swiss chard roll. Something with chick peas, olives, Feta, etc. I can make and freeze; then, just steam for a quick veggie meal. Great to serve with a yogurt sauce.
I'll make those today or tomorrow.
Or, I may do one with brown rice, herbs, turkey, onion, mushrooms; and serve with a cranberry dipping sauce. It will be one or the other. I have everything for both on hand.

Alfredo ... anything pasta is good on my list!
I did the basic salmon burger which was good; nothing special, but quick.

Today's Cooking ...
A very basic meatloaf recipe w/brown gravy; made in 3 mini loaf pans; garden salad w/creamy mustard dressing; garlic bread

Getting over wrist surgery -- it's been a few weeks now so I am back to planning dinners -- but they still need to be less lifting so tonight we are having http://www.recipezazz.com/recipe/hambur ... ooms-25298 with some kind of veggie.

Ellie, I'm hope everything is OK. It's hard to do much which it involves our hand or wrist. Glad you are on the mend. The ground beef plan here as well.
Sounds like a good SAT night comfort food. That is my goal. Go easy on that wrist, and take it easy.
