Tacos (freezer taco meat) w/all the classic toppings, tomato, avocado, cheese, lettuce, salsa, sour cream; spiced up black beans

Yes, the Start of Another Week Once Again ...
Today's Cooking ...
My friend whose dh just left her; she went on a cooking binge yesterday. She said it calmed her. She brought me a plate of meatloaf, herbed mashed cheddar spuds; and, peas. She knows I love peas. She wanted to thank me for the other night. It was delish!
Since I didn't take out my taco meat yesterday; and, my avocado is not quite ripe. I think leftover pork fried rice from the freezer and fruit.
Ladies #1 and #2: Same thing I made for Lady #3 yesterday. http://www.recipezazz.com/recipe/foil-w ... beef-25031 beer bread w/horseradish butter; cabbage and onions in a foil pouch

Also making some veggie stock in my crock pot. Just started it. A mix onion skins, celery ends, mushroom stems, I have some tomato ends, potato ends, garlic cloves, herbs, and some carrot pieces.
Basically, when I get scraps of veggies; I throw them in my freezer gallon ziploc bag, labeled, SCRAPS. Then, when it is full; broth.
Throw it into the crock pot with water; and let it go all day on low. Nothing more than that.
You can use carrot peels, ends of scallions, celery pieces, peels, stems, ends of tomatoes, cabbage even, ends of potatoes, parsnips pieces, etc.
I SAVE IT ALL!
