Not sure tonight but it's going to be with leftover cooked chicken probably either a casserole or creamy chicken and biscuits.

Remember, I get paid to cook for 3 ladies. For me ... I just cook what I like.
But, I do enjoy cooking ... it is sort of comforting for me.
But, artichoke casserole is 4 ingredients, and fish takes 4 minutes; so ... nothing fancy for me tonight.

Hopefully, we can just inspire one another! That is all I want.

Maddie, FYI, creamed chicken and biscuits is a major favorite with me. I would eat that any night of the week.

Actually all 3 of your meals sound wonderful. Stew, strogonoff and mac and cheese. I love them all. Hard to choose.

Today's Cooking ...

mashed horseradish cheesy spuds; sauteed green beans

Me: BBQ marinated grilled chicken breast; baked potato half w/sour cream and cheese; grilled romaine heart w/blue cheese or some homemade vinaigrette
The other half of the spud I use later this week

Did you know ... it was National Pecan Cookie Day!!
