What WAS on Your Plate & and WHAT'S for Dinner Tonight 6/22
HAPPY HUMP DAY EVERYONE!
So, what's on the menu tonight.
My fridge died; repair soon. But most fridge stuff is in coolers; but, luckily I had a second freezer in the garage. So, not much food for me this week. Going easy and eating what I have; mostly condiments and veggies.
Ladies #1 and #2: http://www.recipezazz.com/…/grilled-ind ... ed-salmon-…; couscous; creamy cucumber salad. The salmon was frozen; and, the rest is just a few ingredients. So that will be easy to make.
Me: I think either my ham, bean, and kale soup (freezer stash), and a quesadilla on the side. Or, maybe fried rice. I just don't want to have leftovers to keep; so, single portions. I have both on hand.

Making this for tonight
One Pot Spaghetti & Meat Sauce
1 pound ground Italian sausage (or ground beef, it's not as good with beef though)
1 small onion, chopped
4 garlic clove, minced
1/2 cup green or red bell pepper, chopped
2 cup fresh mushrooms. sliced (optional)
2 cups water
1 14 ounce can low sodium beef broth
1 12 ounce package Barilla PRONTO one pot spaghetti
2 14.5 ounce cans diced tomatoes (with basil, garlic and oregano), separated
1 6 ounce can tomato paste
2 teaspoon dried oregano
2 teaspoons dried basil - or use fresh chopped basil
salt and black pepper to taste
1/3 cup Parmesan cheese (more to serve)
In a large pot or dutch oven, add onion, garlic and sausage meat; cook for about 10 minutes until the meat is browned and cooked through (break the meat up as it cooks). Drain off any grease.
Add the green bell pepper, mushrooms (if using), water, broth, and dried pasta. Bring the mixture to a boil and cook for 5 minutes or (until the pasta is al dente).
While the pasta cooks add one can of tomatoes to a food processor or blender and blend until smooth. Add the diced and blended tomatoes, tomato paste, and spices to the pot, and mix to combine. Bring the mixture to a boil, reduce heat and simmer for 20 minutes or until the spaghetti is cooked through and the sauce has thickened.
Stir in Parmesan cheese just before serving. Serve immediately topped with additional grated Parmesan or Parmesan reggiano cheese.

I truly get the easy part. I always have stuff in my freezer ... soups, small packaged meals. Anything easy. But, I also make small pans of lasagna, other pasta dishes, scalloped spuds, etc., chicken dishes. Anything I can cook reheat easily. Especially when there is only 1 of me.

Tonight it was marinated grilled pork chops, corn on the cob and home grown yellow wax and green beans with mushrooms.
