HAPPY MONDAY EVERYONE! What Happened to the Weekend?
I really think weekends should be 3 days instead of 2. We could have a lot more fun!
Lady #1 and #2: Veal Milanese; asparagus risotto; roasted tomato and fennel salad

Chili-Lime Salmon for us
I double amounts and cook it using a fish griller, on the outdoor grill, this is to die for
1 lb. fresh salmon filet (about 1 lb.)
2 limes
2 tsp. chili powder
1/4 tsp. salt
Directions
1. Preheat oven to 400 degrees. Spray a glass baking dish with nonstick cooking spray.
2. Lay the salmon, scale side down in the baking dish. Squeeze the juice from one of the limes over the salmon. Season by sprinkling the chili powder and salt over the salmon.
3. Bake in the preheated oven for 12-15 minutes, until salmon flakes easily with a fork.
4. Serve with remaining lime, cut into slices or wedges.

Kchurchill5 it is a really great salmon recipe I've made it both ways oven and grilled I have to say grilled is better but you need a fish griller to make it on the grill, I'm not sure if fish griller is what it's called, you stick the fish in between 2 metal wire pieces and then it closes on the fish and stays closed, it has a long handle so you can turn it overKchurchill5 wrote:HomeC, that is so simple; but, sounds so good. Home C, I gill fish all the time; I know exactly what you mean. I grill 90% of the time; so, I got all the gadgets. My oven misses me, lol.
I will try that soon. I even cook my mac and cheese on the grill too.
