HAPPY MONDAY EVERYONE - AND THE START TO A NEW WEEK!!!
Well, Hopefully A Better Week To Come ...

After feeling a bit sickly the last 3 days; back to being almost human again, lol. A pretty quiet weekend; and, back to work for me.

Today's Cooking ...
Ladies #1 and #2: Late Valentines Day dinner w/their bf's - Mixed olives (I add a simple lemon/olive oils dressing; and some herbs and shallots; Maine seafood bake (old recipe/need to post); http://www.recipezazz.com/recipe/quick- ... bread-7206 mixed baby greens w/lemon vinaigrette; http://www.recipezazz.com/recipe/ricott ... usse-25660

Me: I took out some of stuffed swiss chard rolls 2 days ago from the freezer - like stuffed cabbage rolls. Stuffed with rice, mushrooms, veggies, cheese, etc. Baked in a tomato sauce. On the side, I will grill some Italian sausage; and, a fruit salad.

I completely forgot ... smoking 2 chickens today - $3/ea. Got a great deal on 2 small chickens. Brined them last night. Let them dry out in the fridge this am. Now in my smoker.
Most will be bagged up for the freezer. Some for sandwiches, a little for a sandwich; and, the rest later on. Takes 5-6 hours on fairly low, 200 degrees heat. One is chili rubbed, the other lemon pepper. Inside ... stuffed with onions and herbs.
This was the chickens I made last time.

I get about 4-5 bags per chicken. Great for sammies, pasta or green salads, chicken salad sandwiches, wam pasta dishes; also, good as is. And, makes a great BBQ pork sandwich too.

Those two chickens look so good. Maine Seafood Bake sounds like it might be really good too.

Last night I baked some chicken breasts with BBQ sauce and made some mash for the bf, plus some sauteed zucchini and carrots for both of us. Halo Top brand Peanut Butter ice cream for dessert (wonderful).

I have homemade bolognese sauce in my crockpot right now bubbling away for tonight's dinner. I'll be having mine with zucchini noodles and salad, and he'll have pasta and a slice of ciabatta.

KC, those chickens look really yummy!
Last night I made my herb roasted chicken breasts, "leeched" mashed potatoes, and corn. For dessert some snickerdoodle muffins
Tonight I think it's just breakfast.

I got a ton of pepperoni on sale and found a pepperoni casserole recipe to make tonight :)

We just had a boring cheap Monday night tomato soup and cheese sandwiches. Blah!

HF, thank you. Zucchini one of my go to veggies ... and, Halo ice cream, it's actually pretty good. Although I don't eat too much ice cream.

59, nothing boring with soup and sandwiches. Thx Shanni; pepperoni casserole sounds good. And Lovin ... you are on board with the chicken theme too!!! lol.

Today, just me; back to feeling nauscious and achy after 1 good day. I guess I just am trying to fend off the flu of some kind. NO fun; just food doesn't sound good at all.
