Really nice side dish. The cranberries and orange zest together are delicious. I cut the recipe in half but I added the whole amount of cranberries just because I like them.
The celery was quite crispy. I like it crispy for salads but I prefer it on the softer side when it's cooked, so next time I will cook it longer before adding the bulgur.

While I was simmering the coconut I did not like the smell and I was afraid my coconut was bad.

Fantastic recipe, so flavorful. I used mackerel for the fish and served it with Bea's Sauteed Cabbage and mashed potatoes.

What a great side dish. That splash of vinegar it's a game changer. I made it with fresh rosemary.

Great recipe!I did use Bea's Frank's RedHot Sauce copycat with it and substituted the tilapia for mackerel. Served it with some couscous and a green salad. I will definitely make it again.

What a nice and fresh salad.
I ate it on a flat bread over a bed of arugula.
And I used red onions instead just because that is what I had on hand.

Pretty tasty salad. I like the idea of boiling the potatoes in broth.
The flavors meld together nicely if you let it sit for a while.

When I grabbed the potatoes I noticed they have all sprouted, so the gardener in me, planted the potatoes and made this dish with sweet potatoes instead. I served them with a smoky Chipotle chili on top. Very nice.
